Dark chocolate & peanut butter swirls
Adding dark chocolate to snacks is always a wonderful idea, Not only does it taste delicious, but it's also rich in heart-friendly flavanols, antioxidants and an impressive array of nutrients, including magnesium, zinc, and iron. Try and go for good-quality 70% or higher if possible to take advantage of these health benefits (the fewer the ingredients on the back of the pack the better). Paired here with peanut butter, nuts, seeds and dates for a delectable snack that will send your tastebuds flying.
Ingredients
100g almonds
100g hazelnuts
25 pitted dates, soaked in boiling water for 15 mins
1 tbsp chia seeds
1 tsp cinnamon
100g 70-85% dark chocolate (good quality eg Lindt)
2 tbsp smooth & runny peanut butter (Pip & Nut is perfect)
sprinkle of sea salt & chia seeds
Method
1. Line a shallow rectangular tin with baking paper.
2. Add the almonds, hazelnuts to a food processor and mix until the nuts are roughly broken down. Add the dates, cinnamon and chia seeds and mix again to form a sticky mixture is formed.
3. Using your hands, press the mixture evenly into the base of the tin forming a thin layer.
4. Melt the chocolate in a bain-marie and pour this over the base mixture, spreading it out evenly with the back of a spoon.
5. Drizzle the peanut butter over the top and swirl this around using anything pointy (eg. a cake tester). Lastly, sprinkle over extra chia seeds and a little sea salt.
6. Move to the fridge for at least an hour to set, then cut into squares and store in an airtight container.
