Overnight Flax & Chia Oats with Banana, Peanut Butter, Cinnamon & Toasted Seeds

Overnight oats are a wonderful breakfast to help the transition from warming bowls of winter porridge to lighter fruit & yoghurt pots. It is super flexible, allowing you to include your favourite flavours which have time to infuse overnight and it is ready to grab and go immediately in the morning. A win-win I'd say. For me, banana and peanut butter can never disappoint but you have full licence to play around with your go-tos. I always include chia and flax seeds for their powerful nutritional profile but, again, this is completely optional!

Overnight Flax & Chia Oats with Banana, Peanut Butter, Cinnamon & Toasted Seeds Servings: 2 Time: 5 minutes + overnight

Ingredients

80g oats
2 tsp chia seeds
1 tsp ground flax
1 tsp cinnamon
1 tsp raw cacao (*optional)
250ml unsweetened almond milk
½ ripe banana, mashed
2 tbsp peanut butter
1 tsp maple syrup

Topping ideas:
sliced banana
fresh berries
hemp seeds
toasted nuts/seeds
cacao nibs
dollop greek yoghurt
extra drizzle of nut butter

Method

1. Add all of the ingredients into a bowl and mix well. Divide the mixture between an airtight container or two kilner jars and store in the fridge overnight.
2.Stir the mixture the next morning and serve with a selection of favourite toppings. Enjoy!
