No-Bake Seedy Sesame Bites
These gluten-free and nut-free sesame bites are the perfect snack for anyone with a gluten sensitivity or nut allergy as they are still packed with healthy fats, fibre, and protein from all the different seeds, including sesame, sunflower, pumpkin and chia seeds. They are my favourite post- workout treat and keep wonderfully fresh in the fridge for up to 5 days.
Ingredients
350g soft dates
200g pumpkin seeds
160g sunflower seeds
160g gluten-free oats
4 tbsp toasted sesame seeds
2 tbsp ground chia seeds
1 tsp sea salt
5 tbsp tahini
To coat:
Toasted sesame seeds (white and black for added effect!)
Method
1. Start by soaking the dates in boiling water whilst you prepare the rest of the ingredients.
2. In a food processor, add the pumpkin seeds and sunflower seeds and blitz to form a rough powder. Then add the oats, toasted sesame seeds, chia seeds and sea salt and blitz again for a minute.
3. With the motor running, pour in the tahini and blitz until fully combined. You may have to scrape down the edges with a spatula.
4. By now the dates should be lovely and soft. Drain and cut them into small chunks, then with the motor running, add these gradually to the mixture, stopping occasionally to scrape down the sides. You may need to mix this for a few minutes to ensure all the dates are nicely mixed in.
5. Transfer to a bowl then, with damp hands, roll the mixture into 40g balls, coat in toasted sesame seeds and transfer to the fridge on a tray to firm up.
6. Store in the fridge for up to 5 days and enjoy!
