Fig, Cacao & Orange Bliss Bites
Energy bites are typically made with dates, however this recipe uses figs and gosh they are delicious! Figs are lower in natural sugars and 3x higher in fibre than dates, so alongside the
walnuts, chia, pumpkin seeds and cacao, these are an incredibly gut-friendly snack that feeds
those healthy microbes and boosts your gut health. Perfect after a workout, or to pick you up
from that 3pm slump. If you prefer them sweeter, you can try half figs, half dates, or add a
squeeze of honey/maple.
Ingredients
250g dried figs
150g walnuts, roasted
50g pumpkin seeds, roasted
4 tbsp chia seeds or ground flaxseed
5 tbsp cacao powder
Pinch sea salt
Zest of 2 large oranges
Optional: squeeze honey or maple to sweeten if you have a sweet tooth
Desiccated coconut to coat
Method
- Soak the figs in boiling water for 5 minutes whilst you prep the other ingredients.
- Using a food processor, blend the roasted walnuts and pumpkin seeds until ground, then, with the motor running, add the chia seeds, cacao, and sea salt.
- Zest the oranges and add these to the mix then blitz again.
- Drain the figs and roughly chop, then add these to the blender gradually until everything is combined and the mixture has come together in a ball.
- Taste and add more orange zest or cacao depending on how bitter you like it (this can range a lot between people).
- Toast the desiccated coconut and add to a bowl.
- Roll the mixture into small balls using damp hands, coat in the coconut then layout on a tray. Refrigerate the whole lot for a couple of hours before transferring to a tupperware and storing in the fridge.
