Colourful Fermented Buddha Bowl

Throwing a load of colourful goodness into a bowl is one of the easiest ways to produce a nourishing lunch with minimal effort. It doesn’t need to look Instagram-worthy, just experiment by adding at least 6 different plant foods and one fermented food (more if possible). Fermented foods help to nourish our gut with good bacteria, and they also happen to be very delicious and filling.

Ingredients

1 tbsp kimchi
1 tbsp sauerkraut (vary between red, yellow and white varieties
4 slices tempeh, baked or fried in a little olive oil until golden
small handful raw spinach
½ avocado sliced
2 tbsp cooked puy lentils (eg Merchant Gourmet)
1 strip of smoked salmon
tahini dressing
sunflower and pumpkin seeds

Method

1. Cook the tempeh and puy lentils according to packet instructions.
2. Serve everything in a big bowl and enjoy.
