Giant Crispy Courgette and Halloumi Fritter with Herby Yoghurt, and Fresh Cucumber
Sometimes, lunch just calls for one giant crispy fritter. One pan, no fuss. Courgette is one of my go-to fritter ingredients as it’s so delicious when it gets crispy and goes perfectly with the halloumi. Serve on a bed of herby yoghurt and top with herbs and cucumber to add freshness to the fritter.
Ingredients
1 courgette, grated
30g halloumi
1 tbsp parsley leaves, roughly chopped
1 tbsp dill, chopped
1 spring onion, finely sliced
1 tbsp self-raising flour
1 egg, beaten
1 tbsp coconut oil
Herby Yoghurt
2 tbsp greek yoghurt
1 tbsp, finely chopped
squeeze lemon
salt and pepper
cucumber slices
Method
1. Grate the courgette using the largest grater option. Squeeze out the excess water using your hands and set between a few sheets of kitchen towel for a few minutes.
2. Meanwhile, coarsely grate the halloumi and add to a mixing bowl with the parsley and spring onion. Then add the grated courgette and stir well until everything is fully combined.
3. Add the flour to the bowl, stir well then season with salt and pepper.
4. Make a well in the centre of the mixture, pour in the beaten egg and use a fork to make sure everything is evenly coated.
5. Heat the coconut oil in a large non-stick frying pan over medium heat. Pour in the courgette mixture and use the back of a spatula to press into an even layer in the pan. Turn up the heat and cook for a few minutes until set underneath and turning crispy. Use a plate firmly over the pan to carefully flip the fritter, then slide the uncooked side back into the pan and cook for another few minutes until golden and crispy.
6. Mix all of the yoghurt ingredients together, spread this out on a plate, top with the fritter and the cucumber slices and serve.
7. Top with any fresh herbs and pickles you have at home (optional!).
