Green Omelette Wrap
This green omelette wrap has been my go-to choice lately for a quick & nourishing savoury breakfast (or lunch or dinner!!). It’s a fun, colourful alternative to a regular omelette as the eggs are first blended with spinach and herbs to give it the vibrant green colour, then filled with fresh ingredients for a lighter feel. It’s packed with healthy fats (from the eggs, smoked salmon, avocado, toasted seeds, nuts, and extra virgin olive oil) and an array of other beneficial nutrients that are all essential for skin health. Just remember, healthy fats don’t make you fat, so enjoy the variety included in this wrap. They will fill you up and balance your energy levels all morning.
Ingredients
2 eggs
Handful spinach
1 tbsp green herbs (parsley, coriander, basil etc)
1 garlic clove, crushed
Squeeze lemon juice
Salt
Pepper
Generous knob butter or drizzle olive oil
Fillings:
Smoked salmon
½ avocado
Toasted pumpkin and sunflower seeds
Toasted almonds, roughly chopped
Handful mixed leaves
Drizzle extra virgin olive oil
Method
- Crack the eggs into a Nutribullet cup (or another blender) and add the spinach, herbs, garlic, lemon juice, salt and pepper. Blend until smooth.
- Melt the butter in a large frying pan over medium heat then pour in the green egg mixture, tilting the pan to ensure the base is evenly covered.
- Leave to cook for 3-4 minutes, occasionally edging the sides with a spatula to loosen
- Remove the pan from the heat and have your filling ingredients ready to assemble (it’s much easier to fill and fold in the pan then move to a plate).
- One one half of the wrap, spread on the smoked salmon, avocado, seeds, nuts and leaves, then carefully fold over the other half (if this catches use the spatula to help you)
- Transfer to a plate and drizzle with good quality extra virgin olive oil before serving
