Oatless Flax, Chia and Pumpkin Seed Porridge with Cinnamon, Ginger and Maca

A wonderful alternative to traditional porridge when oats feel a little heavy or just don’t sit that well with you. This breakfast is still so energising & warming whilst we ride out these chilly January mornings. Seeds are nutritional powerhouses so this is an amazing way of getting a variety into one dish. Get creative with your toppings and remember, the more colour the better!

Oatless Flax, Chia and Pumpkin Seed Porridge with Cinnamon, Ginger and Maca Serves: 1 bowl

Ingredients

2 tbsp flax seed
1 tbsp chia seed
1 tbsp pumpkin seeds
1 cup almond milk
2 tbsp almond butter
1 tsp cinnamon
1 tsp ground ginger
1 tsp maca powder (optional)

Topping ideas:
stewed apple
coconut yoghurt
hemp seeds
walnuts
berries
tahini
coconut flakes
cacao nibs

Method

1. Add the flax, chia and pumpkin seeds to a blender and pulse until ground. Add the rest of the ingredients and blend until smooth. ⠀

2. Transfer to a small saucepan and heat, adding more milk if necessary to reach a porridge-like consistency.

3. Sprinkle with favourite toppings & enjoy!
