Grilled Peach and Apple Compote
This delicious summer compote using fresh juicy peaches and apples is a brilliant addition to your morning yoghurt, granola, porridge, overnight oats and more. The process is a little fiddly, but it is totally worth it, as once you have a big batch it’s ready to grab and go! I use raw unrefined coconut sugar but you can of course use any sugar you have at home. If you don’t have ground cardamom you can swap this for ground ginger, or turmeric for cinnamon.
Ingredients
800g white peaches, cut into bitesize chunks, stone removed
1kg Bramley apples, cubed and core removed
70ml water
120g coconut sugar or any light brown sugar
1 lemon, cut into chunks and pips removed
1 tsp turmeric powder (or ground cinnamon)
1 tsp ground cardamom (or ground ginger)
Pinch sea salt
Method
- Add the water, chopped apples, sugar, lemon, turmeric and cardamom into a large saucepan and cook for approximately 45 minutes until soft. Take off the heat to cool a little.
- Whilst the apples are cooking, grill the peaches on a griddle pan and set aside.
- When the soft apples have cooled a little, use a hand blender or regular blender to mix until smooth.
- Add the grilled peaches to the apple mix and store in the fridge for up to 2 weeks.
