Rainbow Wraps with Extra Crunch

Wraps provide a wonderful foundation for a quick, colourful, nourishing lunch, as you can pack in any leftover vegetables, salad leaves, meat/fish, pulses, herbs, hummus, and even fruit, that you might have lying around that needs to be used up. As long as you include some kind of sauce so the wrap doesn’t taste dry, you can’t really go wrong. I’ve set out various suggestions below but, as always, get creative with your favourite colours, textures, flavours, and nutrients. These are super easy for kids to make too, so get them involved and excited.

Rainbow Wraps with Extra Crunch To serve: 4 wraps

Ingredients

4 whole grain tortilla wraps (gluten-free if necessary)
4 tbsp hummus (or other sauce such as tahini, pesto, or mayonnaise)
1 large bunch leaves (rocket, lettuce, spinach, watercress)
1 large handful fresh herbs, roughly chopped (parsley, min, coriander, chives, dill)
4 small portions leftover meat or fish (eg chicken, turkey, salmon)
4 handfuls leftover vegetables (grated, chopped, or roasted depending on the veg)
1 portion fruit (eg peach, strawberries, cherries, apple)
1 large handful toasted seeds (pumpkin, sunflower, sesame)
salt & pepper
any extra dried herbs/spices (eg sumac, za’atar, oregano, nigella seeds)
2 tbsp extra virgin olive oil

Method

1. Lay out the tortillas on 4 plates or sheets of baking parchment if making them to-go, and generously spread over the hummus (or other sauce) to cover the base.

2. Next place the salad leaves and fresh herbs on top so they stick to the hummus.

3. Then simply spoon over choice of fillings, making sure not to pack it too full which we are all guilty of!

4. Finally add a generous sprinkle of toasted seeds, dried herbs/spices, salt, pepper and a drizzle of olive oil for good measure.

5. Fold over the bottom edges then roll the tortilla from right to left to tuck in the filling.

6. If eating there and then, tuck in! If transporting them, wrap the baking parchment in the same way you did the tortilla and then twist the top end to prevent the filling falling out.

7. Fold the top and bottom edges over the filling. Roll the whole tortilla from left to right to wrap in the filling. Roll some parchment paper around them and tie with a string to hold them together while you transport them.

*TIP – swap the wrap for large lettuce leaves for a lighter version.
