Warming Ginger, Carrot, and Apple Spiced Porridge
As the mornings get colder and the evenings darker, our bodies start to crave warming, comforting dishes that feed both the heart and soul. For most, a cosy bowl of porridge really hits the spot, so finding ways to mix this up and include a variety of ingredients and flavours is key to keeping things interesting. To boost those plant points and fibre intake, this uses grated carrot, apple and ginger in a delicious carrot cake twist.
Ingredients
50g porridge oats (gluten-free if necessary)
1 inch ginger, peeled and finely grates
1 small carrot or ½ large carrot, peeled and finely grated
1 small apple, core removed and finely grated (skin can be left on for extra nutrients)
1 tbsp raisins (optional)
½ tsp ground cinnamon
½ tsp ground nutmeg
3 cardamom pods, shelled and crushed
pinch sea salt
250ml unsweetened almond milk (or other plant-based milk)
1 tbsp coconut sugar or maple syrup
Method
1. Add all the ingredients to a small saucepan over a low heat and stir everything well.
2. Bring to a gentle simmer and cook for 10 minutes until the oats and soft and creamy. Feel free to add more milk if necessary.
3. Serve with toasted seeds, yoghurt, nut butter and any seasonal fruit.
